Mendola is a Salento dialect term meaning “almond.” In the past, it was a common practice to cultivate various types of trees, including almond trees, among the rows of the vineyards so that farmers could rest under the shade of their fronds.

SOIL

Leverano: medium texture soil, some parts with ‘terra rossa’ (red soil) for the presence of iron oxides. This type of soil offers a balance of sand, silt and clay, facilitating water and nutrient retention and ensuring vines a constant supply of essential substances for their growth. In some areas of Leverano the presence of red soil is observed due to iron oxides. This feature enriches the complexity of the wines, as the minerals in the soil influence the aromatic profile and the wine structure, giving them unique notes.
